My Mother’s Vegetarian Casserole

Here’s how to make my favorite thing in the whole world – my Mom’s vegetarian casserole. This was our favorite recipe growing up. It does not taste anything like you think it will.

Here’s the recipe:
Note: the G. Washington Broth is vital. It will not taste the same without it.

-In a large mixing bowl combine:
-1/2c butter, melted
-5 large eggs
-24oz small curd cottage cheese
-1/2c chopped pecans
-1 white onion diced fine
-G.Washington Broth, 2 packets Rich Brown, 1 packet Golden
-7 oz Original Special K, crushed small

-Combine and put in large, greased casserole dish, (so it won’t stick)
-cover with tin foil and bake at 350 for 45 minutes
– remove Tin foil and bake 15 minutes more
– you can leave it in a little longer if you like. The edges and top getting a nice browned finish really makes it good!
