Since I am on a roll with just working with what is in my kitchen, I whipped this up for lunch and it turned out to be really tasty!
I used 1 zucchini made into noodles with the Veggetti, 4 cloves of minced garlic, 1/3 diced red onion, fresh basil from the garden chopped, cherry tomatoes halved, Kalamata olives halved, crumbled feta, salt and olive oil, (I forgot to put olive oil in the picture, but I’m sure you know what it looks like!)
Put the diced onion and minced garlic in a large pan with olive oil and sauté.
I like to saute’ until the garlic is brown. I know that’s personal opinion :)
When the onion and garlic are done, throw in the zucchini noodles to heat them up.
Throw the halved cherry tomatoes in as well and salt to taste.
Add the olives just before you take it off the stove top. Give it a good stir.
Plate it and serve with crumbled Feta. I added a few more halved cherry tomatoes just because they’re pretty on top when they’re fresh.
A really easy, really yummy, quick lunch!!!!
