A while back I started experimenting with roasting vegetables. I started doing it because I was not really a fan of steamed veggies. I know they are good for you, but I like a little more robust flavor!
This is a recipe I saw in a number of places and thought I would try it. You will need: one head of cauliflower, olive oil, salt, pepper, za’atar spice, lemon and fresh parsley.
I never realized how much I liked vegetables until I started roasting them. Tonight there was some asparagus in the refrigerator, just begging to be roasted, so I did it my favorite way.
