Asparagus, but better : )

I never realized how much I liked vegetables until I started roasting them. Tonight there was some asparagus in the refrigerator, just begging to be roasted, so I did it my favorite way:

I wash the asparagus and cut off the ends. Then I cut the rest up in 3 or 4 sections to make it easier to eat.
I cut up a red onion in large pieces, and separate each layer so they’re not sticking together.
I REALLY like garlic, so I use a whole head, take the cloves apart, then skin them.
Then I mince them and mix them in with the asparagus and onion. (The more you brown the dish, the more the garlic becomes nutty vs sharp, so if you don’t like it really browned you might use less garlic).
Add olive oil and salt and mix it up. Then spread it evenly on a baking sheet.
Put it in the oven at 400 degrees until desired level of browning. A lot of people would take it out at this point,
But I like it more browned, so I leave it in until about here

It is a great side dish for any main course. Roasting and garlic make so many vegetables the best part of the meal : )
