Blueberry Peach Crisp


For the filling:

4-5 peaches – peeled, pitted & sliced
2 pints blueberries
1/2 cup sugar
3 Tblsp cornstarch
1/4 tsp almond extract


For the topping:

1 cup AP Flour
1 cup oats
1/2 cup brown sugar
1/4 cup sugar
1/2 tsp cinnamon
6 Tblsp Butter, melted

Pre-heat oven 350.
In bowl, gently mix fruits, sugars, cornstarch & almond extract together until combined. Pour the fruit mixture into an oven proof dish and spread evenly.  Mix the rest of the ingredients for the topping starting with flour and ending with butter. Sprinkle mixture on top of fruit and bake 45 minutes till top is golden and fruit bubbly. Let cool and serve with ice cream.
