Green Beans with Blue Cheese and Walnuts

This is so easy it is almost self explanatory. It is a perfect quick dish or vegetarian lunch. 

You will need 1 pound of fresh green beans. (I like to get the French beans with the ends already cut off). You will need some olive oil, salt and pepper, crumbled blue cheese and toasted walnuts.

Green Beans

Put the green beans in a large skillet.

Add some water and turn it up, bring the water to a boil.

Add salt and pepper, cover and cook for about 4 minutes.

Take off the lid and cook for three more minutes, or until the water has evaporated and the beans are tender. (If you started out with too much water you can simply drain the excess off.) 

Add some olive oil to the skillet. Stir the green beans and cook for another minute.

Put the green beans and a large bowl and toss with crumbled blue cheese. I tend to use a good amount of blue cheese because I really like it! 

Plate each serving and add toasted walnuts to each plate.

It’s really good! If you have someone in your house that does not like vegetables, try something like this and I think you will change their mind!
