It's no secret that I LOVE roasted veggies so I loved this dish that I made with a couple of variations...I used olive oil instead of avocado oil, I also added roasted pecans at the end. It was so delicious!
This is the same recipe as peach dump cake, except it's 2 cans of cherry pie filling instead of 3 cans of peaches (no draining the juice as these are not in juice, they are in a thicker base). Just as easy and delicious!
